Vinification and ageing: The grapes coming from a 35-year vineyard where they are able to enhance their potential. The grapes are harvested in two different passages: mid-September in order to maintain the freshness and early October when grapes are completely ripe. The grapes ferment on their skins in steel tanks at 16-22 degrees until racking, which is decided according to a daily tasting. Grapes keep on ageing on their lees for at least 6 months.
